Brief Introduction:

China is the world’s largest mutton producing country with very few import and export volume, and its mutton production mainly is provided for itself; as for varieties, there are 127 mutton sheep breeds in domestic, but most mutton sheep are crossbred and improved breeds; currently, most mutton is room temperature meat, while chilled fresh mutton, frozen mutton and mutton products are fewer; in terms of slaughtering, private slaughterhouse takes the main part of mutton sheep slaughtering in China, while large scale slaughtering enterprises are fewer; with regard to consumption, outdoor consumption is the main part with urban residents as main consumers. Mutton sheep breeding mainly concentrates in pasturing area which mainly including Inner Mongolia, Xinjiang and Gansu and the inventory of these provinces accounts for 46.4% of national inventory. Mutton sheep breeding in agricultural area mainly concentrates in Henan, Shandong and Hebei, and the inventory of these three provinces accounts for 19.3% of national inventory. Though China’s mutton output, total consumption quantity and number of sheep farmed all rank first in the world, the concentration degree of current mutton sheep breeding is not high in China, feeding mode is backward, and mutton sheep industry develops slowly. Since 2005, the improvement of residents’ consumption level and the change of dietary pattern have made mutton consumption increased stably, especially high-end lamb meat consumption. The contrast between supply and demand promoted mutton price to rise stably. The wholesale price of mutton increased 81% in 2013 from 2008, and the investment value of mutton sheep industry is prominent. As for mutton sheep breeding, the proportion of scattering farming is decreasing in China, trend of scale breeding is obvious. In terms of mutton sheep slaughtering and processing enterprises, the operation rate of large and medium-size enterprises is lower, and the phenomenon of individual workshop slaughter is noteworthy. Mutton sheep slaughtering and processing enterprises will face huge integration potential in the future.
